Grilled spicy eggplant rings. It is also known as Baingan Katri.
- 1 Brinjal (eggplant), sliced
- 3 tablespoons Oil
- 1 tablespoon Garlic, ginger, red chili paste
- 1 tablespoon Red chili powder
- 2 tablespoons Coriander powder (dhaniya)
- Mix spices with oil and salt.
- Marinate brinjal slices with spice paste.
- Pan fry slices on both sides till eggplant is tender.
- Serve Ringan na palita with roti.
