Rice gruel made with coconut milk
- 1/2 cup Red parboiled rice/Matta Rice
- 4 cups Water
- 1/2 cup Freshly grated coconut
- 1 1/2 cups Thick coconut milk
- Salt to taste
- Pressure cook rice with water for 3 whistles.
- Once cooked, add salt, coconut and coconut milk and boil on medium low heat. Keep stirring till it is reduced to a porridge consistency.
- Serve Paal kanji hot or warm.
