Neemki is an easy to make instant raw mango-onion pickle from Himachal Pradesh. You can serve this pickle with chapati, roti, or rice.
- 1 Medium size Raw mango, chopped into 1" pieces
- 1 Medium size Onion, peeled and chopped into 1" pieces
- 1 teaspoon Methi, dry roasted and ground into a fine powder
- 1 teaspoon Ajwain
- 1 tablespoon Sugar
- 1 tablespoon Red chilli powder
- 1/2 teaspoon Turmeric powder
- 2 tablespoons Mustard oil, heated to smoking point and cooled
- Salt to taste
- Mix all ingredients together.
- Let it rest for 30 minutes.
- Serve Neemki with chapati, roti, or rice
