Khaja is a sweet dessert where a layered dough of flour and sugar is fried in oil and then dipped in a sugar syrup. Originated and popular in eastern India, Khaja is regular offering to deity of Jagannath Puri.
- 1 cup All-purpose flour
- 2 Cardamom
- 1 tablespoon Rice Flour
- 2 cups Water
- 2 cups Sugar
- 4 tablespoons Ghee
- Pinch of salt
- 1 teaspoon Baking powder
- 1 tablespoon Semolina
- Sunflower oil
- Knead a soft dough with flour, semolina, baking powder, salt, water and three tbsp of ghee.
- Divide the dough into 4 equal balls and roll it into 4 round shaped rotis.
- Add a tbsp. of ghee and rice flour in a bowl and mix well.
- Layer all the 4 rotis, one on top of the other with some ghee and rice flour mixture in between each roti. Fold them together to form the shape of a log.Cut the dough into small pieces and flatten with a rolling pin.
- Deep fry the dough till golden brown on both sides.
- Prepare a thick sugar syrup with 2 cups of water, 2 cups of sugar and few cardamom.
- Add the fried dough into the sugar syrup and soak for few minutes.
- Enjoy sweet and crunchy Khajas.
