Kalingad Pole

White portion of watermelon is often wasted. This is good way of using the fibers of watermelon rind.

Ingredients

  • 3/4 cup watermelon rind
  • 1 cup rice
  • salt to taste
  • Oil

Instructions

  1. Wash and soak rice for 2 hours.
  2. Drain and grind along with rice, without adding any water. Add salt and ferment overnight.
  3. Heat pan, grease oil. Add large spoon of batter and spread to make pan cake / dosa.
  4. Grease oil on sides. Flip and cook other side.
  5. Serve kalingad pole along with chutney
