White portion of watermelon is often wasted. This is good way of using the fibers of watermelon rind.
- 3/4 cup watermelon rind
- 1 cup rice
- salt to taste
- Wash and soak rice for 2 hours.
- Drain and grind along with rice, without adding any water. Add salt and ferment overnight.
- Heat pan, grease oil. Add large spoon of batter and spread to make pan cake / dosa.
- Grease oil on sides. Flip and cook other side.
- Serve kalingad pole along with chutney
