Thin rice pancakes, a specialty of the Malabar region of Kerala
- 1 cup Rice powder
- 1 cup Water
- 3 Shallots, chopped
- 1/4 cup Coconut, grated
- Salt to taste
- Oil / Ghee
- Boil water with salt and add shallots, coconut and rice flour. Mix well and knead a soft dough when cooled.
- Make medium size balls, place it on a banana leaf and spread it outwards with your fingers.
- Heat a pan and cook the dough on both sides. Apply ghee or oil while cooking.
- Serve Kai pathiri with a curry of your choice.
