Gajar nu athanu is hot spicy carrot pickle from Gujarat.
- 500 grams carrot, thin and sliced uniformly
- 2 tablespoons oil
- 1/4 teaspoon hing
- 2 tablespoons red chilli powder
- 1 tablespoon mustard seeds
- 4 tablespoons fenugreek seeds, crushed
- 1 tablespoon salt
- 3 lemon, juiced
- 6 green chillies, halved
- Allow carrots to dry to remove moisture.
- To make masala, in oil add spices, salt and lemon juice.
- Mix well. Add Carrots and mix well.
- Store gajar nu athanu in air tight container.
