Gajar nu athanu

Gajar nu athanu is hot spicy carrot pickle from Gujarat.


  • 500 grams carrot, thin and sliced uniformly
  • 2 tablespoons oil
  • 1/4 teaspoon hing
  • 2 tablespoons red chilli powder
  • 1 tablespoon mustard seeds
  • 4 tablespoons fenugreek seeds, crushed
  • 1 tablespoon salt
  • 3 lemon, juiced
  • 6 green chillies, halved


  1. Allow carrots to dry to remove moisture.
  2. To make masala, in oil add spices, salt and lemon juice.
  3. Mix well. Add Carrots and mix well.
  4. Store gajar nu athanu in air tight container.
