Batate Kosambari is a simple and easy Konkani recipe using very few ingredients such as potato, coconut and tamarind. This chutney goes well with rice.
- 3 boiled potatoes, medium sized peeled and chopped
- 1/2 cup finely chopped onion
- 1/2 cup fresh coconut
- 4 red chillies
- Tamarind, as per taste
- Grind coconut, chillies, tamarind and salt to smooth paste with minimum water.
- Add potatoes and onions. Mix.
- Refrigerate and serve Batate Kosambari cold as side dish.
